Putting down new roots

Underwood Park is a family home, a project, and a dream for Angela Escolme and Josh Phillips, who became custodians of the farm in 2021. Coming from UK farming families, they each spent over a decade working in geology before being drawn back to the land—albeit far from the soils they once knew. Motivated by a desire to farm differently, they set out to create a productive, regenerative farm that supports the local ecosystem and community.

What is regenerative agriculture?

Regenerative agriculture is a holistic approach to farming that works with nature to restore and improve the health of the land. In cattle grazing systems like ours, livestock are managed in a way that mimics natural grazing patterns — allowing pastures time to recover, build soil health, and support diverse ecosystems.

Rather than depleting resources, regenerative grazing aims to regenerate them. By rotating cattle through paddocks, maintaining ground cover, and encouraging deep-rooted pasture growth, this approach improves soil structure, increases water retention, captures carbon, and enhances biodiversity.

For our cattle, this means grazing full time, contributing naturally to the fertility of the soil, and playing a key role in a balanced ecosystem.

For our community, it means producing nutrient-rich, ethically raised beef while caring for the land today and restoring it for future generations.

Our journey, shared with you

We are committed to working with nature not chemicals to build soil health, increase biodiversity, conserve water and sequester carbon through regenerative grazing practices. Our beef customers are part of this journey back to health.
